A Legacy Continued

We’re a mother-daughter team who didn’t grow up planning to own a bakery, but when the listing for one of Pueblo’s long-standing, well-loved bakeries popped up on Facebook, something about it stuck with us. My mom saw an opportunity. She also saw me, someone who had always wanted to build something of her own but just needed the chance to step into it. So she took that chance on me. What started as a leap of faith quickly became more than a business. It became our shared project, our classroom, and our way of turning belief into something real.

Where its Going

Built from experience.

Designed to give it back.


We are both proud graduates of CSU Pueblo:

one earning a Master’s in Nursing, the other a Master’s in Business Marketing.


Two different paths, shaped by the same belief:

education should lead to something real.


During our time on campus, we both saw it.


Spaces meant for business sitting unused.


Students learning concepts without ever stepping into true operations.


That didn’t sit right with us.

So we decided to build what was missing.

We’re bringing Hopscotch onto Colorado State University Pueblo's campus as more than a bakery.


This will be a fully functioning business built into the student experience.


Not a simulation.

Not a case study.


Real decisions. Real responsibility. Real outcomes.


Students will have the opportunity to earn credit while working inside the business;

learning operations, marketing, product development, and the discipline it takes to run something that actually performs.

And this part matters most to us.


We’ve both lived here.

We’ve both built here.


And we’ve seen how often students leave after graduation, taking their talent somewhere else.

We believe that can change.


If students are given the chance to build something real, to be part of something growing, they have a reason to stay, contribute, and continue building within this community.
